العسل لا يكاد منزل يخلو منه لأهميته وقيمته الغذائية الثرية، ويحرص الجميع على الاستشفاء به، ولا يقتصر شراؤه وبيعه على وقت محدد، فحركة البيع والشراء في العسل طوال العام. وفي الآونة الأخيرة كثر باعته من خلال إعلانات منصات التواصل الاجتماعي بأسعار تراوح بين 250 - 400 ريال للكيلو الواحد حسب نوعه، ومن خلال استطلاع أجرته «عكاظ»، وسط شريحة كبيرة من المجتمع تبيّن جهل الغالبية بتمييز الأصلي من المضروب والفرق بين الجيد والمغشوش، واتفق الجميع أن سوق العسل المفتوحة يجب أن تخضع للرقابة من خلال إنشاء الجمعيات أو البرامج والفعاليات التي توعّي وتثقّف المستهلكين، كما أوصى المستطلعون بمراجعة الأسعار خصوصاً أن إقبال الناس على العسل بصورة كبيرة طوال العام الأمر الذي جعل العمل في مجال بيع العسل طريقاً للثراء عند بعض الناس الذين امتهنوه للكسب المادي رغم جهل بعضهم بأصول الصنعة وتقاليدها.
ومع وجود بعض المناحل المتخصصة في بيع العسل ذي الجودة العالية تبقى معرفة العسل الأصلي مجهولة عند البعض ويقع الزبون ضحية للغش.
ابتعد عن باعة الرصيف
يقول محمد سالم الزهراني، إنه يحرص على شراء العسل بشكل مستمر طوال العام لما له من فوائد عظيمة للإنسان، والمشكلة التي تواجهه هو وغيره، هي عدم معرفة الأصلي من المغشوش، وبالتالي يقع المستهلك في عملية غش، «وأتذكر أنني اشتريت كيلو عسل من أحد الباعة على الرصيف في إحدى المتنزهات، لكنه لم يكن عسلاً ذا جودة عالية، وأسأل كيف نعرف الجيد والمغشوش»؟
يرد على ذلك عبدالرحمن سفر الغامدي، ويقول: هناك جهل في معرفة العسل ذي الجودة العالية والجودة العادية، وكثيراً ما نسمع وقوع البعض في عمليات غش، وأكثر سؤال يتردد، كيف نميز العسل ونعرف جودته ونوعه؟ هل من خلال الطعم أو اللون أو الرائحة؟ هنا نتمنى من الجهات الرقابية أن يوضحوا لنا طرق سهلة في معرفة العسل الأصلي من المغشوش.
ويقول سامي قاحص: أن للعسل سوقاً كبيرة، وسبق أن قمت بتجربة الكثير منه وفعلاً وجدت العسل الأصلي ذا الجودة العالية، لكن سعره عالٍ إذ يصل الكيلو إلى 350 - 400 لعسل الطلح، والسدرة 400-450 ريالاً، وبالتالي يلجأ الزبون إلى عسل أقل جودة؛ لكي يجد السعر المناسب حسب إمكاناته «أنا أستخدم العسل كثيراً، ووجدت فيه العلاج والفائدة ومتى ما وجدت البائع الأمين تعاملت معه».
كمية قليلة تكفي
بعض الخبراء والمختصين، يرون أنه يمكن تناول العسل بكميات قليلة كجزء من نظام غذائي صحي لمريض السكري. وإذا كنت تستخدم الأنسولين، فمن المهم حساب كمية الكربوهيدرات بما في ذلك العسل. هذا يساعدك في تحديد الجرعة الصحيحة من الأنسولين التي يجب أن تأخذها ومراقبة كمية الكربوهيدرات والألياف فيمكن أن تساعدك في الحفاظ على مستوى السكر في الدم حتى مع استخدام الأنسولين فارتفاع السكر في الدم قد يسبب مشكلات صحية على المدى الطويل. لذلك، من الأفضل التقليل من تناول العسل. ولا بد من استشارة الطبيب أو مختص السكري لمعرفة الكمية المناسبة للاستعمال.

متى أعلن حبه؟
أوضح خبير وبائع للعسل محمد شريع الشهراني، أن هواية حب العسل بدأت معه منذ الصغر، وساعد على ذلك طبيعة منطقته الجنوبية التي تزخر بأجود أنواع العسل، وقال: سبب توجهي للعسل وتجارته شح البلدي الجيد في السوق وكثرة الغش ما بين العسل المغذى بالسكر والمصنّع وخلط المستورد بالبلدي أو بيعه كبلدي وهذا منتشر بكثرة للأسف عند بعض النحالين والمسوقين، ومن هنا بدأت فكرة البحث عن مصدر بلدي موثوق؛ لتوفير العسل الأصلي لي وللباحثين عن العسل البلدي الأصلي والبحث عن المناحل التي تنتج العسل بذمة وأمانة والوقوف عليها شخصياً وعمل الفحص المخبري اللازم لها، ومع الوقت تم إنشاء متجر إلكتروني وتم تطويره بشكل كبير لتسهيل وصول العسل لباب العميل بكل يسر وسرعة.
ويضيف، أن أهم ما يريده العميل في العسل هو الجودة والمصدر الموثوق والسعر المناسب فعندما تجتمع هذه الشروط تكسب ثقة الناس واحترامهم. وعن جهوده في التوعية قال بن شريع: «من المهم أن تتم التوعية من المختصين في هذا المجال بطرق الغش في العسل وتصحيح بعض المفاهيم الخاطئة في معرفة الجودة، إذ لا توجد طريقة دقيقة لمعرفة العسل المغذى والمصنّع إلا بالفحوصات المخبرية في المختبرات المختصة، ونتمنى أن تكون هناك متابعة مشددة على دخول الكميات الكبيرة من العسل المستورد؛ لكي لا تباع في السوق على أنها عسل بلدي وبأسعار غالية.
المستورد مصنّع.. ومضروب
يقول ثامر عثمان، نعمل في مجال تربية النحل من الطفولة، أخذناه بالوراثة أباً عن جد، وللأسف معرفة الزبائن بالعسل الأصلي ضعيفة، ونحن نوضح للزبون كيفية معرفة الأصلي، وبعد تجربته للمنتج نكسب ثقة الزبائن، وفي الحقيقة مجال العسل مجال صعب لكثرة الغش.
والبعض يأخذ المهنة سبيلاً للكسب الرخيص وجني المال بأي طريقة، وللأسف المستورد (المصنّع) أثّر في الإنتاج المحلي. لدينا في المملكة ثروة في مجال إنتاج العسل وتنوع نباتي ونحرص على الإنتاج المميز، وأيضاً على الابتعاد عن المناحل الأخرى التي تقوم بالتغذية.
افحص اللون والتماسك
عن العسل المحلي يقول سمير الزهراني: عسلنا المحلي فائدته أكبر من العسل المستورد، وأغلب مشاركات النحالين السعوديين المحلية والدولية تحقق مراكز متقدمة قارياً وعالمياً وتفوز بجوائز ومراكز متقدمة، فقط نحتاج لدعم إعلامي للعسل المحلي فالمستورد الذي يرد إلى المملكة وجد دعماً إعلامياً مما جعله يغزو السوق المحلية.
ويضيف الزهراني قائلاً: أن العسل الأصلي له مواصفات معروفة وظاهرة، منها لونه، غير متقطع ومتماسك، وله رائحة الزهرة التي يأخذ النحل الرحيق منها، أما العسل المغشوش فيمكن معرفته بخفته وسيلانه ورخص سعره أحياناً، لكن نعود ونقول إن المختبرات هي الفاصل الحقيقي التي تكشف نوعية وجودة العسل.

فساد العسل
استشاري التغذية السريرية ورئيس الجمعية السعودية الدكتور عبدالعزيز محمد العثمان
يقول: إن من علامات فساد العسل تغيّر الطعم واللون والرائحة والقوام، فالعسل الطبيعي إذا حفظ بطريقة سليمة ومكان بارد وجاف وفي علبة زجاجية أو بلاستيكية خاصة لا يفسد، أما الحفظ في الأواني المعدنية فإنه يسبب فساد للعسل، فالأصل للعسل أنه يبقى عشرات السنين دون أن يفسد.
سالت «عكاظ» الدكتور العثمان هل العسل المغشوش له أضرار؟ فأجاب: نعم له أضرار للأسف كمية كبيرة من العسل بالأسواق مغشوش ومركبات تم تصنيعها في بعض الدول، وهي عبارة عن سكر ومحاليل منوعة ومحروقة لتعطي طعماً قريباً من العسل، وهذه تسبب أضراراً كبيرة على مرضى السكر، ومن الصعب التفريق بين العسل الطبيعي وغير الطبيعي، ولا يمكن كشف العسل حتى في المختبرات الكبرى.

نحالي الباحة
جمعية النحالين التعاونية بالباحة تقول: تتميز منطقة الباحة بالمراعي النحلية المتنوعة وفي معظم أشهر السنة وفي مساحات متقاربة من مستوى سطح البحر إلى مرتفعات تزيد عن 2,000 متر فوق سطح البحر، ومن أهداف الجمعية، تطوير صناعة النحل، وبدأت تنظيم مهرجان سنوي يعرض فيه النحالون منتجاتهم من العسل.
وقامت الجمعية أيضاً بإحضار خبراء وعلماء وعمل دورات ومحاضرات ومؤتمرات وورش عمل على هامش المهرجانات السنوية وإنشاء مشتل (بيت محمي) للنباتات النحلية، ومعهد للتدريب، وتم تدريب أكثر من 4,000 متدرب ومتدربة بعضهم من دول الخليج، كما أنشأت الجمعية مختبراً لفحص جودة العسل، وشاركت الجمعية في لجان متابعة الغش في العسل بالمنطقة.
نصيحة لمريض السكري
الباحث في التغذية طلال عبدالعزيز الفريح، استعرض فوائد العسل لمرضى السكري أو المعرضين لخطر الإصابة به، إذ يحتوي العسل على بعض الفوائد الصحية، إلا أنه لا يزال مصدراً للسكريات البسيطة والكربوهيدرات. وبالتالي من المهم أن يراقب مريض السكر كمية الكربوهيدرات التي يتناولها يومياً، خصوصاً إذا كان يستخدم أدوية مثل الأنسولين، فالعسل تم تصنيفه كـ«سكر مضاف» في جدول ملصقات الأغذية؛ لأنه ليس جزءاً طبيعيّاً من الغذاء نفسه، بل يُضاف له للتحلية. وهو مصدر للكربوهيدرات، التي تتكون بشكل أساسي من الجلوكوز والفركتوز. وهذا ما يجعل العسل مميزاً عن باقي الأصناف الأخرى، إذ إنه يستهلك كاملاً بالمغذيات وليس مفصولاً لوحده مثل السكر، وهذا يؤثر على ارتفاع مؤشر السكر في الدم، ويعطي العسل أفضلية.
المغشوش يؤثر على الصحة؟
نعم يؤثر على الصحة بسبب التغيّر في مكون المنتج الرئيسي فأي تلاعب أو تعديل على الصنف الغذائي سواء العسل أو أي منتج آخر يلغي هوية هذا الصنف. فالعسل الذي يعتبر منتجاً صحيّاً بمكوناته الأساسية إذا أضفنا له قطرة من أي مركب قد يغير في شكل الترابط الكيميائي داخل جزيئات العسل، وبالتالي تتغير خواصه، وإذا تغيرت خواص المنتج تغير المنتج وأصبح منتجاً آخر وغالباً إلى الأسوأ. هذا إضافة إلى الخسائر المادية، وأسوأ سيناريو ربما يحصل للإنسان في عالم الأغذية وقطاع المنتجات هو أن يدفع مبلغاً عالياً على منتج توقع منه تزويده بالطاقة والمغذيات ويصبح العكس ويكون هو سبباً في مرضه على المدى البعيد.
الحل.. فحص المختبر
يقول النحال والخبير السعودي عضو مجلس إدارة جمعية النحالين بالباحة سمير سعيد الزهراني: تردنا استفسارات كثيرة عن كيفية معرفة جودة العسل والمغشوش، وصراحة يصعب على المستهلك معرفة العسل الأصلي وجودته إلا باختبار العسل بالمختبرات المتوفرة، ولدينا بجمعية النحالين بالباحة مختبر لمعرفة الأصلي والمضمون، ودون التحليل بالمختبرات يبقى العسل محل شك لكثرة الغش فيه، واستغلال الناس الذين لا يعرفون عن جودة العسل وإغرائهم بالأسعار الرخيصة، ومن أنواع الغش بيع العسل المستورد على أنه محلي وبلدي، وبالتالي الزبون العادي ينخدع، ويبقى شراء العسل معتمداً على الثقة بين النحال والزبون ومعرفة البائع، علماً أن النحالين في الغالب يتكبدون خسائر ببعض المواسم بسبب قلة الإنتاج.

Some take the profession as a means of easy profit and making money in any way, and unfortunately, imported (manufactured) honey has affected local production. Examine the color and consistency
Regarding local honey, Samir Al-Zahrani says: Our local honey has greater benefits than imported honey, and most of the local and international contributions of Saudi beekeepers achieve advanced positions regionally and globally, winning awards and high rankings. We only need media support for local honey, as the imported honey that comes to the Kingdom has found media support, allowing it to invade the local market.
Al-Zahrani adds: Original honey has known and apparent specifications, including its color, which is unbroken and consistent, and it has the scent of the flower from which the bee collects nectar. On the other hand, adulterated honey can be identified by its lightness, liquidity, and sometimes low price.
