لطالما ارتبطت قاعدة مضغ الطعام 32 مرة قبل بلعه بتحسين عملية الهضم، إلا أن خبراء يؤكدون أن هذا الرقم ليس قاعدة علمية ثابتة، بل مجرد إرشاد عام يشجع على تناول الطعام ببطء ومضغه جيداً، وهي عادة ثبت أنها تقدم فوائد صحية عديدة، تمتد من تحسين الهضم إلى المساعدة في التحكم بالوزن.
وفي هذا الصدد، أوضحت استشارية الطب الباطني في مستشفى أستر CMI بمدينة بنغالور الهندية الدكتورة بروندا إم إس، أن المضغ الجيد يمثل الخطوة الأولى في عملية الهضم، لأنه يفتت الطعام إلى أجزاء صغيرة تسهل بلعه، كما يسمح لإنزيمات اللعاب، وعلى رأسها إنزيم الأميليز، بالبدء في هضم الكربوهيدرات قبل وصول الطعام إلى المعدة.
وأضافت أن الاعتقاد بضرورة مضغ كل لقمة 32 مرة لا يستند إلى دليل علمي، موضحة أن عدد مرات المضغ يختلف باختلاف نوع الطعام؛ فالأطعمة اللينة تحتاج إلى مضغ أقل، بينما تتطلب الأطعمة الصلبة أو الغنية بالألياف مضغاً أطول حتى تصبح سهلة البلع.
هل يساعد المضغ على حرق السعرات؟
وأشارت دراسة نشرت عام 2021 في دورية Scientific Reports إلى أن المضغ البطيء والطويل قد يزيد من استهلاك الجسم للطاقة بعد تناول الطعام، وهي العملية المعروفة باسم التوليد الحراري الناتج عن الغذاء (Diet-Induced Thermogenesis).
وأظهرت الدراسة أن منح الجسم وقتاً أطول لتذوق الطعام ومضغه يعزز معدل حرق السعرات الحرارية أثناء عملية الهضم مقارنة بتناول الطعام أو السوائل بسرعة، ما قد يساهم في تحسين عملية التمثيل الغذائي وتقليل خطر الإصابة بالسمنة على المدى الطويل.
فوائد المضغ الجيد
وتوضح الدكتورة بروندا أن مضغ الطعام جيداً يقدم العديد من الفوائد الصحية، أبرزها: تحسين عملية الهضم، تقليل خطر الاختناق أثناء تناول الطعام، الحد من الانتفاخ وعسر الهضم، زيادة امتصاص العناصر الغذائية، منح الدماغ وقتاً كافياً لاستقبال إشارات الشبع، ما يقلل الإفراط في تناول الطعام ويدعم الحفاظ على وزن صحي.
كما حذرت من أن ابتلاع قطع كبيرة من الطعام بسرعة قد يرهق الجهاز الهضمي، ويزيد من أعراض الارتجاع المريئي وعسر الهضم لدى بعض الأشخاص.
المضغ والشعور بالشبع
وفي السياق نفسه، أكدت دراسة نشرت عام 2015 في مجلة Physiology & Behavior أن إطالة مدة المضغ تقلل الشعور بالجوع وتخفض كمية الطعام المستهلكة، وذلك من خلال تحفيز إفراز هرمونات الأمعاء المسؤولة عن إرسال إشارات الشبع إلى الدماغ.
ورغم أن الدراسة لم تحدد عدداً معيناً من المضغات لكل لقمة، فإنها خلصت إلى أن تناول الطعام ببطء ومضغه جيداً يعد وسيلة فعالة ومدعومة علمياً لتحسين الشهية وتعزيز الإحساس بالشبع والمساعدة في التحكم بالوزن.
نصائح لتحسين المضغ
وينصح الخبراء بالتركيز على جودة المضغ بدلاً من عدّ مرات المضغ، وذلك من خلال: تناول لقيمات صغيرة، مضغ الطعام حتى يصبح ليناً وسهل البلع، تجنب الحديث أثناء الأكل، وضع الملعقة أو الشوكة بين كل لقمة وأخرى، الابتعاد عن الهاتف والتلفزيون أثناء تناول الطعام لتجنب التشتت.
وأكدت الدكتورة بروندا أن استمرار صعوبة البلع أو تكرار الاختناق أو الانتفاخ ومشكلات الهضم، رغم تناول الطعام ببطء، يستدعي مراجعة الطبيب لتحديد السبب وعلاجه.
وبحسب الخبراء، فإن الفائدة الحقيقية لا تكمن في الالتزام برقم 32 مضغة، وإنما في اتباع أسلوب تناول طعام هادئ يمنح الجهاز الهضمي الوقت الكافي للقيام بوظيفته بكفاءة، ويساعد على تحسين صحة الأمعاء، وزيادة امتصاص المغذيات، والحد من الإفراط في تناول الطعام.

It also allows saliva enzymes, primarily amylase, to begin digesting carbohydrates before the food reaches the stomach.
She added that the belief in the necessity of chewing every bite 32 times is not based on scientific evidence, clarifying that the number of chews varies depending on the type of food; soft foods require less chewing, while solid or fiber-rich foods require longer chewing until they become easy to swallow.
Does chewing help burn calories?
A study published in 2021 in the journal Scientific Reports indicated that slow and prolonged chewing may increase the body's energy expenditure after eating, a process known as diet-induced thermogenesis.
The study showed that giving the body more time to taste and chew food enhances the calorie-burning rate during digestion compared to eating food or liquids quickly, which may contribute to improving metabolism and reducing the long-term risk of obesity.
Benefits of good chewing
Dr. Brunda explains that chewing food well offers many health benefits, the most notable of which include: improving the digestion process, reducing the risk of choking while eating, minimizing bloating and indigestion, increasing nutrient absorption, and giving the brain enough time to receive signals of fullness, which reduces overeating and supports maintaining a healthy weight.
She also warned that swallowing large pieces of food quickly may strain the digestive system and increase symptoms of gastroesophageal reflux and indigestion in some individuals.
Chewing and the feeling of fullness
In the same context, a study published in 2015 in the journal Physiology & Behavior confirmed that prolonging the chewing duration reduces feelings of hunger and decreases the amount of food consumed by stimulating the secretion of gut hormones responsible for sending signals of fullness to the brain.
Although the study did not specify a certain number of chews per bite, it concluded that eating slowly and chewing well is an effective and scientifically supported way to improve appetite, enhance the feeling of fullness, and help control weight.
Tips for improving chewing
Experts recommend focusing on the quality of chewing rather than counting the number of chews by: taking small bites, chewing food until it becomes soft and easy to swallow, avoiding talking while eating, placing the spoon or fork down between each bite, and staying away from phones and televisions during meals to avoid distractions.
Dr. Brunda emphasized that persistent difficulty in swallowing, recurrent choking, or bloating and digestive issues, despite eating slowly, requires a visit to the doctor to identify and treat the cause.
According to experts, the real benefit lies not in adhering to the number 32 chews, but in following a calm eating style that gives the digestive system enough time to function efficiently, helps improve gut health, increases nutrient absorption, and reduces overeating.
